Crunchy Cabbage, Kale & Carrot Salad w/ Immunity-Boosting Dressing

This vibrant and nutrient-dense salad is packed with fiber, vitamins, and antioxidants to support digestion, energy, and immunity. The addition of a spiced dressing featuring turmeric, ginger, and black pepper enhances its healing properties.



Ingredients:


For the Salad:


  • 2 cups green or purple cabbage, shredded (rich in fiber & vitamin C)

  • 1 cup kale, chopped (immune-boosting & detoxifying)

  • 1 large carrot, grated (high in beta-carotene)

  • 1/2 small red onion, thinly sliced (supports digestion & immunity)

  • 1/4 cup fresh cilantro or parsley, chopped (optional, for freshness)

  • 1/4 cup toasted pumpkin seeds or sunflower seeds (for crunch & zinc)


For the Immunity-Boosting Dressing:


  • 3 tbsp olive oil (healthy fats for absorption)

  • 1 tbsp apple cider vinegar or lemon juice (aids digestion)

  • 1⁄4 tsp Perfect Blends Vegetable seasoning

  • 1 tsp honey or maple syrup (balances acidity)

  • Sea salt to taste (optional)


Instructions:


  • Prepare the Salad: In a large bowl, combine cabbage, kale, carrots, red onion, and fresh herbs. Toss to mix evenly.

  • Make the Dressing: In a small jar or bowl, whisk together olive oil, apple cider vinegar, Perfect Blends seasoning, turmeric, ginger, cinnamon, black pepper, honey, and salt until smooth.

  • Dress the Salad: Pour the dressing over the salad and toss well to coat all ingredients.

  • Let it Marinate: Allow the salad to sit for 10-15 minutes to let the flavors meld and slightly soften the kale.

  • Add Crunch: Sprinkle toasted pumpkin or sunflower seeds before serving.
